Spinach Lasagna Roll Ups

Is you family in love with the classic italian pasta dishes?? And are you always looking for a way to add more vegetables to dinner along?? Nature’s Reward has the perfect dinner idea that will add vegetables and also put a great twist on a family favorite…. Spinach Lasagna Roll Ups.

Ingredients:

Fresh Spinach

1lb ground pork (beef or lamb would work as well)

9 cooked lasagna sheets 

1 15oz container ricotta cheese

1/2 cup parmesan cheese

1 egg

1 container of pasta sauce (homemade even better)

4 cloves of garlic minced

1 tablespoon of rosemary

Mozzarella cheese fot topping

Directions

Preheat oven to 375 F

In a saucepan heat a splash of olive oil and sauté garlic for 2 min and then add 1lb of ground pork and 1 tablespoon of rosemary

Cook pork mixture thoroughly until there is no more pink and set aside

In a medium bowl combine ricotta cheese, parmesan cheese and egg

Pour a portion of the pasta sauce into a baking dish to make a thin even coating

Place paper towel over a cutting board and placed cooked lasagna sheets on top, pat dry

Place and even out two spoonfuls of ricotta cheese mixture on each sheet

Place spinach on top of lasagna sheet (amount varies), remember fresh spinach will cook down a lot in the cooking process.

Sprinkle ground pork on top of each sheet

Roll sheets up and use a toothpick to help stabilize each roll up

Place in baking dish

Place two spoonfuls of sauce of each roll up

Top with mozarella cheese

Cover and bake for 40 min

    I made this and loved it. I was a bit lazy though inetsad of layering, I just mixed it all up together and made like a baked pasta.. was super yummy! I also don’t like chunky sauce so I left out the diced tomatoes.
